This instrument also contains a Baumé scale which measures the percentage of acidity present in the grape juice. The Mustimeter comes with graphics* to show how to:
Reduce the alcohol content by adding a certain amount of water to the grape juice (depending on the desired alcohol content).

Increase the alcohol content by using a vinous alcohol
Control and correct the must acidity
Preparing the mistelle ("jeropiga") with the addition of a vinous alcohol. (Jeopriga (Mistelle) is a liqueur of sweet wine obtained by interrupting fermentation with the addition of a vinous alcohol to the must).
